Roasted Pepper Greek Yogurt Dip

Looking for something easy to make for that last minute Ameri-celebration? 

This Roasted Pepper Dip is cool, tasty and SUPER EASY!  I'm telling you - it's healthy and by easy I mean E-Z! You know I'm a dip lover, although REAL TALK - I'm more of Scooper not a Dipper!  This dip is full of REAL FOODs that are good for you and goes great with all things crunchy or as a spread on a sandwich!  Satisfying, low in calories, & healthy - now that's a Win-Win! Personally, I always have these items in stock, so whether you are entertaining, going to someone's house, or like me: perpetually hungry, this pretty dish can be whipped up quickly with little effort!

2 Medium Red Bell Peppers - *Roasted (If you need to substitute a Yellow or Orange that will do too! OR as a BIG Time Saver - use jarred!)
1 Cup Greek Yogurt (I prefer 2%)
2-3 Cloves of Garlic (pending on size - if substituting w/ Garlic Powder about 1/2 tsp)
1 tsp Dried Basil
1/2 tsp Cumin
Pinch of Cayenne (My pinches are big, so use your judgement on how spicy you like your food - a little can go a long with this as you don't want to kill the rest of the flavors, but it gives a nice kick at the end!)
Salt & Pepper to taste
You will need a blender/food processor of sorts.  My favorite is the immersion blender - also makes the clean up much easier!

*If you are roasting your peppers:
Preheat Oven to 375 degrees
Cut tops off of the peppers, removing the stem, seeds and the white parts (aka Pith). 
Slice peppers in Half (feel free to quarter them)
Line a baking sheet (I used foil, but you could also use parchment paper) and lay out the peppers.
Let the peppers roast, and be sure to flip them - once the skins have blistered, remove from oven, place in a bowl, cover and let them cool.  (You can also put them in the fridge).  After the peppers cool, the skin should peel off easily.

Combine all ingredients into your blender - blend until smooth.  The dip will be more of a liquid consistency at first.  Place dip into a container, cover and store in the refrigerator.  The dip will thicken as you let it sit and store (approx 1-2 hours).  Serve with your favorite crunchy crudites, pita chips, or spread it on a sandwich!
